Birthday Brownies!

I turned 35 on May 10th! When I was younger, I had friends that were super excited to be 15.5 to get their temporary driving permit...16 for their official license...18 to be classified as an "adult"...21 to drink...but I was always looking forward to 35! You have to be 35 years of age to be considered for President! Now I'm laying the groundwork for my campaign! I've already secured a campaign fundraiser and an assistant for him! I have a First Lady...well actually a First Gentleman...and two additional, wonderful, yogis who have agreed to be a part of My Entourage! Clearly I'm well on my way to The White House!


Before additional campaign planning, I desired to celebrate reaching the age I'd been so patiently waiting for! My parents threw me a little party at home and served my favorite brownie for dessert! I twisted their arms for the recipe, which was previously a part of my inheritance and they're well aware that I'm sharing dessert with you!


(Step 1) Gather Essentials!

Organic if available for ingredients...

*2 1/2 cups of Raw Pecans...extra if you prefer pecans on top of your brownies as I do!

*1/2 cup Coconut Sugar...I plan to try Brown Sugar as a substitution next time I make this recipe!

*1/4 cup Pure Maple Syrup

*2 Eggs

*3 Tablespoons Almond Flour

*1 teaspoon Pure Vanilla Extract

*1/2 teaspoon Baking Soda, not pictured by mistake!

*1/4 teaspoon of Pink Himalayan Sea Salt

*Food processor!


(Step 2) Preheat oven to 350 degrees fahrenheit!


(Step 3) Place pecans on a baking sheet and toast in oven for 7 minutes! Keep a close eye on your nuts to avoid burning! Remove from oven when finished toasting and allow to cool! *Keep oven at 350!


(Step 4) Mix eggs, maple syrup, vanilla extract, and coconut sugar until smooth.


(Step 5) Stir in almond flour, baking soda, and sea salt into step 4.


(Step 6) Place your toasted nuts into food processor and turn them into butter! The food processor pictured above took 60 seconds to complete this step for me! Finish processing when you've achieved an almond butter like consistency! Measure out precisely 1 cup of homemade pecan butter and add to step 5. I hope you have some leftover butter so you can enjoy on a spoon! Delicious!


(Step 7) Line an 8x8 inch baking pan with parchment paper and add batter.

*Be sure to spread batter evenly into the corners and along the sides.


(Step 8) If you love nuts as much as I do...sprinkle additional pecans on top of your brownie prior to baking!


(Step 9) Bake for 20 minutes and remove from oven to create a fudge brownie texture! If you bake for longer you will end up with a chocolate cake consistency. I've never been a fan of cake but I love a wonderful brownie!


(Step 10) Allow brownie to cool in pan for 20 minutes.


(Step 11) Enjoy! Pairs perfectly with a cup of coffee and a glass of almond milk!


In The White House, these Pecan Brownies will be a staple in the mornings right before the entire house, required, Tai Chi = Martial Qigong!
