Chocolate Zucchini Bread

Step 1) Gather essentials!

Dry Ingredients:
-1 1/4 cups Certified Gluten Free, All-Purpose Baking Flour by Bob's Red Mill
-3/4 cup Organic Brown Sugar
-2 teaspoons Certified Gluten Free, Aluminum Free, Baking Powder by Bob's Red Mill
-1 1/8 teaspoons Organic Cinnamon
-1 1/8 teaspoons Organic Nutmeg
-1/2 teaspoon Certified Gluten Free, Baking Soda by Bob's Red Mill
-1/2 teaspoon Himalayan Salt
Additional Ingredients Needed:
-1 cup grated Zucchini, about one large Zucchini, room temperature, squeezed of excess water
-1/2 cup Semi-Sweet Mini Chips from Enjoy Life, Allergen Friendly
-1/3 cup Organic Coconut Oil, melted + additional needed to grease mini loaf pans
-1/4 cup Sweetened Vanilla Almond Milk, room temperature
-2 eggs, room temperature
-2 teaspoons Organic Pure Vanilla Extract
-1 teaspoon of freshly squeezed Lime Juice from an Organic Lime, room temperature
Step 2) Preheat oven to 350 degrees Fahrenheit
Step 3) Using Organic Coconut Oil, grease 2 mini loaf pans, very very well to avoid sticking
Step 4) In a medium bowl, stir the dry ingredients together

Step 5) Add the following ingredients, which must be at room temperature: Eggs, Almond Milk, Lime Juice, and Vanilla Extract to dry ingredients and stir again

Step 6) Grate Zucchini, room temperature

Step 7) Using super super clean hands, squeeze grated Zucchini to eliminate excess water

Step 8) Add melted Organic Coconut Oil to batter and stir to combine
Step 9) Add grated Zucchini and Semi-Sweet Mini Chips to batter and stir to combine

Step 10) Evenly distribute batter into greased loaf pans
Step 11) Bake for 25-30 minutes, until set in middle, test middle using a toothpick
Step 12) Let cool on counter in loaf pans for an additional 10 minutes
*I used greased parchment paper for one loaf, which I don't recommend

Step 13) Remove loafs from pans (turn out) and allow additional cooling on wire rack
Step 14) Enjoy!

Step 15) Store leftovers tightly wrapped in plastic wrap at room temperature
