Homemade Ramen Noodle Soup

In my younger years, I knew nothing about nutrition and the foundation it creates. I willingly chose to infuse my being with processed convenience foods that I would define these days as unhealthy. Packaged chicken flavor ramen noodle soup, microwaveable macaroni and cheese, Oreos, and Lucky Charms were among my favorites and surely my staples.
I can't take back my past and honestly would not if given the option. My past makes me more real and approachable. I've interacted with individuals who were raised on Organic farm fresh foods, from scratch home cooked meals that were infused with lots and lots of love from every unfathomable angle. These individuals obtained similar degrees in the field of Food & Nutrition. When they started their adventures interacting with the community, post degree, they ran into difficulties. Their seemingly flawless past, though amazing, was difficult for the community to relate to and vise versa.
I have a background in both unhealthy and healthy eating. I truly understand the struggles at both ends of the spectrum. To everybody's surprise, including my own, I have overcome the hardship associated with transitioning through the Stages of Change. I now sit comfortably in the Termination Stage, with no desire to return to my past unhealthy behaviors.
I do however feel it is important to never forget where we came from. As a result, I really enjoy taking some of my old unhealthy classics and recreating them in the healthiest way possible.
I surely can't take all the credit for this one! The following recipe is deeply, deeply, inspired by My Hot Hispanic, who recently made me his version of Homemade Ramen Noodle Soup!

Homemade Ramen Noodle Soup
(1) Gather Essentials!...
-Ramen noodle cooking basket *optional*
I purchased mine for under $5 at a local Marketplace, Park to Shop
-Organic, Free Range, Pasture Raised Eggs
-Microgreens, I chose clover & radish
-Mushrooms, I chose Enoki
-Fresh Organic Ginger Root
-Organic Mushroom Broth
-Organic Coconut Aminos, Soy Free
-Organic Jalapeño Hot Sauce, my favorite is by Simple Truth
-Non-GMO Project Verified, Authentic Green Curry Paste
-Gluten Free Noodles! Regarding My Hot Hispanic, I love his attention to detail and quality and the outcomes associated with his research! He discovered these noodles for us and they are by far my favorite! We order them through Amazon, shipped from Japan, $60 for 8 packages. Even though one package is considered one serving, to better control carbohydrate intake, I feel you should only consume 1/2 package per sitting. Depending on if you agree with me or not you are looking at 8-16 servings per order and $3.75-$7.50 per servings, making this purchase a deal by my standards!
(2) You are going to need your entire stove to prepare this experience!
-Sauté on medium heat okra, mushrooms, ginger root (1 tablespoon per person), and microgreens in an Earth Balance Buttery Spread (European Style, Organic Coconut, OR Soy Free) to desired texture and keep warm on stove!
(3) Prepare broth...
-Place 1 cup of mushroom broth, per person, in a sauce pan on medium heat! Once boil has been reached, turn heat to low and keep broth warm.
In a clean authentic ramen bowl (*optional*) place...
-1 tablespoon of buttery spread
-1 tablespoon of coconut aminos
-1 teaspoon of green curry paste
-1/8 teaspoon of jalapeño hot sauce
-Mix ingredients together with chopsticks (*optional*)
***Disclosure: for heart health related reasons, it is important not to exceed my recommended servings listed above for the mushroom broth and coconut aminos. Broths and aminos on average are higher in sodium levels and intake should be restricted as a result.
(4) In a large sauce pan place purified COLD water, your noodle basket, and eggs. Bring water to a boil, then set timer to cook eggs for 13 minutes total!
When 4 minutes remain on your egg timer, add one package of noodles to your basket!
When you timer goes off...
-remove noodle basket from water and set aside.
-remove eggs from water (SAVE WATER) and place eggs in a purified COLD water bath to stop the cooking process!
(5) Lets finish the broth!...
-Place 1 cup of warm mushroom broth into your authentic ramen bowl
-Place 1/4 cup of warm water from your egg and noodle cooking process into your authentic ramen bowl
-Mix your individual broth serving in your authentic ramen bowl, with your chopsticks!
(6) Assemble masterpiece!
-Add 1/2 package of cooked noodles (1 package max) into your authentic ramen bowl, which is currently holding your individual serving of broth
Add the following on top of your noodles and broth:
-1 egg (cut in half)
-sautéed warm microgreens (recommended serving 1/4 cup)
-sautéed warm mushrooms (recommended serving 1/4 cup)
-sauteed warm ginger root (recommended serving 1 tablespoon)
-sautéed warm okra (recommended serving 1/4 - 1/2 cup)
