Lemongrass Thai Shrimp Soup - mild style!

Estimated to provide 4 servings, 2 cups of broth per serving
(Step 1) Gather Essentials, Organic Ingredients if possible, at least NON-GMO Project Verified!
-1 lime, cut in half
-2 stocks of lemongrass, cut in half lengthwise for easy removal at the end
***serves as flavoring only, don't try to serve or eat the lemongrass
-2 containers (64 ounces) of low-sodium vegetable broth
-2 tomatoes, cut into chunks
-2 containers (10 ounces) of shiitake mushrooms
-4 tablespoons of chopped cilantro
-5 tablespoons of Soy Free Buttery Spread
-12 slices of sushi ginger
-16 ounces of shrimp (4 ounces per serving)
(Step 2) In a large sauce pan bring the following to a boil for 5 minutes: vegetable broth, lemongrass, tomatoes, cilantro, ginger, and half of lime (squeezed into broth).
(Step 3) Reduce heat to a simmer (just below boiling point) for 25 minutes. *During this time you will be preparing your mushrooms and shrimp!
(Step 4) In a large skillet, on medium heat, melt 3 tablespoons of butter and sauté mushrooms to desired consistency. When finished add mushrooms into broth mixture.
(Step 5) In the same large skillet (no need to clean yet), on medium heat, melt an additional 2 tablespoons of butter and sauté shrimp until fully cooked. *Shrimp cooks very fast and does not taste good if over cooked. Don't multitask; stay with your shrimp for the entire time to avoid over cooking. Be sure to cut shrimp in half lengthwise to ensure doneness.
(Step 6) Place 4 ounces of shrimp into each bowl or glass storage container while you wait for broth mixture to finish simmering.
(Step 7) When you've finished your 25 minute simmer, remove lemongrass stocks and dispose accordingly, then squeeze the other half of lime into broth and stir.
(Step 8) Using a spoon strainer attempt to remove mushrooms from broth and evenly distribute into bowls or glass storage containers.
(Step 9) Evenly distribute broth mixture and ginger (if possible) into bowls or glass storage containers.
(Step 10) Enjoy! Gin Khao! (Bon Appétit in Thai)! Say it out loud: "geen KAO!"
