Polenta by Maggie Pancake!

One of my favorite families has requested a polenta recipe and they call me Maggie Pancake! It's funny to me as for the longest time I've utilized polenta as a gluten free pancake substitute! I particularly love polenta on a given Saturday and/or Sunday morning; when it might be common for the entire family to sit down together to break fast and share in the excitement of the weekend!

(Step 1) Gather Essentials! Organic ingredients if possible at least NON-GMO Project Verified! Items can be found at local groceries including health food stores. You can also utilize "buy now" or "store locator" at websites linked below to find the nearest grocery to your current location.

-Maple Syrup

-earth balance Soy Free Buttery Spread

-Traditional Italian Polenta by ANCIENT HARVEST

(I don't prefer flavored or seasoned varieties of polenta. Traditional is my favorite)

(Step 2) Over medium heat melt butter in skillet.

(Step 3) Slice polenta to your desired thickness; experimenting is the best way to find your preference. Sauté polenta in butter for 5 minutes on each side (10 minutes total) to create a warm soft breakfast!

(Step 4) Remove from heat, spread additional butter on top of the polenta you plan to consume, drizzle with maple syrup, and enjoy!

(Step 5) Save leftovers in a glass storage container for a super easy meal later today or tomorrow!

(Step 6) To fry leftovers: melt butter in skillet over medium heat! Cook again for 5 minutes each side (10 additional minutes total) to create a more crunchy experience!

(Step 7) If you're in the mood for breakfast again...add butter, maple syrup, and enjoy!

(Step 8) If you'd prefer a different experience, I recommend polenta served with sautéed spinach and a filet of fish! I would sauté the spinach and bake the fish in earth balance, soy free, buttery spread, then drizzle maple syrup over the entire dish! So the same ingredients listed above are needed plus your favorite fish! I favor salmon, arctic char, rainbow trout, and flounder! Mmmmm delicious!
