Vegan Bolognese

Personal Chef turned Blogger! One of my favorite recipes is now yours! Alternative suggestions are offered for those not interested in a vegan lifestyle or in experimenting with meatless meals!


I primarily cook meals that are organic, dairy-free, gluten-free, and soy-free but you are welcome to make substitutions to my recommendations as you desire to better fit your lifestyle and goals. Although, it should be noted, I feel most would benefit from the elimination of conventional animal products and conventional items within the dirty dozen, plus dairy, gluten, and soy all together.


(Step 1) Gather essentials...


-My favorite organic gluten-free pasta is by Tinkyada and can be quickly located in the grocery by the cute little bunny rabbits on the packaging! When I make recommendations for alternatives to wheat, rye, and barley (gluten containing ingredients) you can expect that these products are just as good if not better than their gluten containing equivalent.


Choose any shape you desire! I chose standard spaghetti noodles!


-Plant Based Ground Beyond Beef by Beyond Meat! The product label and website show this item to be vegan (no animal products including dairy), soy-free and gluten-free, kosher, no GMOs (genetically modified organisms), and providing 20 grams of plant based protein per 4 ounce serving.


>You would be welcome to purchase organic ground bison, organic ground beef, organic ground pork, organic ground chicken, or organic ground turkey, if you don't desire an animal free (vegan) bolognese.


-Organic Pasta Sauce. I do enjoy making my own sauce from scratch, recipe compliments of My Hot Hispanic. Honestly, more often than not, I take the lazy way out and purchase prepared sauce from a local grocery, to save time and money.


-Veggies, I chose mushrooms! A medley of peppers and onions would have been other great options!


-Maple Syrup, organic and/or local preferably!


-Follow Your Heart Vegan Mozzarella Brick Cheese. Don't take the lazy way out and purchase their shredded variety, it's not as good as their brick! I need you to shred the brick yourself! Better yet, delegate the task! My mom shredded this cheese for me! ;) When I make dairy-free recommendations, you can count on the items to be just as good as their animal equivalent!


(Step 2) Brown Ground Beyond Beef, on medium heat, in an Earth Balance Buttery Spread, for 5-8 minutes per packaging recommendations. I prefer Soy Free, Olive Oil, Organic Coconut, or European Style spreads by Earth Balance!


(Step 3) Bring pasta sauce to a boil on medium heat then reduce heat to low and secure lid on pan to keep sauce warm.


(Step 4) Sauté veggies on medium heat in an Earth Balance Buttery Spread.


(Step 5) Cook pasta per packaging recommendations. *ALWAYS* rinse cooked gluten-free pasta with purified cold water when your desired pasta texture has been reached. If you skip the recommended cold water rinse, you will dramatically decrease the quality of your pasta.


(Step 6) Per individual served you will need...

-1 cup of cooked pasta placed on clean plate

-1 cup of warm pasta sauce with 2 tablespoons of maple syrup and 1/4 cup of cooked warm Beyond Ground Meat mixed into pasta sauce, then placed on top of cooked pasta

-1/2 cup of sautéed warm veggies placed on top of sweetened vegan meat pasta sauce

-1 tablespoon of shredded vegan cheese placed on top of sautéed warm veggies

-Black pepper and a Balsamic drizzle to taste, if desired


(Step 7) Enjoy! Buon Appetito!
